Year in Review Quarter 2 April-June

If you missed it yesterday, because I edited the Thankful Thursday post in the afternoon, RYAN AND I ARE OFFICIALLY HOMEOWNERS! We closed on our 1st home yesterday... I can't wait to share it with you, as well as the before and after photo's as we get to work on it!

Thankful Thursday V4.5

This past week I have been so thankful for the holiday season. Christmas is such an amazing holiday. We are celebrating the birth of our Savior! I'll keep with a seasonal theme for this weeks Thankful Thursday as we wrap up the year.

I am thankful for:

Bible in a year...

I know I've mentioned it before, but I figured as the year ends I'd mention it again, just in case anyone has decided to join up with me.

In 2012 I'd like to read through the entire Bible in one year.

I've never read the entire Bible, so I am excited of this challenge. And I am quite aware that as it will be fast paced. But, I still want to do this.

I had actually grabbed a copy of The One Year Bible, the entire New Living Translation arranged in 365 daily readings for $2 at my newest favorite book store, and was quite excited by that find....

and then, last Sunday (Christmas) as I was sitting at church, reading over our bulletin, this caught my eye:

2012 is almost here! We are excited for new opportunities for spiritual growth in the coming year. We're asking God to make 2012 a year of Mobilizing our Church for Growing and Going. So get Growing and take the Read through the Bible in a Year challenge. The schedule will be printed each week in our Worship Guide.

And just like that, not only was I planning to read through the entire Bible in a year, but many members of my church as as well. Which means I will have multiple accountability partners.

THIS IS GREAT!

Can we say God's perfect timing?

I am so excited to start this challenge on January 1st, and while I realize it will be a tough one, finding the time each day in our already busy lives, I hope that maybe one or two (or more) of my followers will join me in this challenge. I had thought about doing a weekly link up but wasn't sure how many would actually want to participate. Then I thought maybe instead of doing a Bible in a year link up, I'd just do a general link up of what God is teaching you this week, or what you've read in the Bible this week.... What do you all think? Opinions please. :)

Year in Review Quarter 1 Jan-March

I like to recap my year(s) as I think it will be something fun to look at down the line. I know I'll always cherish my blogging days as it's an easy way for me to pull up awesome memories, which is an amazing tool for someone like me with a horrible memory when it comes to certain things (other times I remember the most minuscule things).

Christmas Recap - Word Version

HI FRIENDS! :)


This post is coming to you live from my comfy bed via my brand new IPAD2!!!

Yes... I typed that right. My husband and my Dad went in together to purchase me an iPad and I couldn't be more thrilled. As you may have read in previous posts, I was debating between an iPad and a Kindle Fire. My husband decided that an iPad would be best suited for what I wanted it for (blogging purposes included) AND on top of this already awesome gift, my husband and father in law went in together and bought me an amazing case that includes a keyboard ran off blue tooth. HELLO! Now, when I attach it to the keyboard, it truly is like a tiny laptop. PERFECT for blogging as I am doing at this very moment.

I am titling todays blog post the "word version" because honestly, I was a bad blogger over the weekend and didn't capture very many pictures. I caught a few on my cell but I am utterly exhausted and don't feel like uploading them just yet, so I will scour family facebooks for photo's I can borrow, as well as upload my pictures sometime this week and share them with you all.

As for the past few days?

Thursday was my husbands birthday, as most of you know from the Thankful Thursday post I did. We have been so blessed to both have off Thursday - today, together. On Thursday we went out to breakfast to Cracker Barrel with three of our friends to have a birthday breakfast. Mmm... Then he did some last minute shopping (an iPad maybe?) with his friends, while I did the same, we ended the night at another friends house. I didn't get him anything super big for his birthday this year, he wanted a new tap out shirt, so that's what I got him.

Friday we did more last minute shopping, together, and then went on a double date with some of our friends to Abuelo's. Before the double date, Ryan and I went to Picasso's cup and painted an ornament together. We decided to start collecting an ornament for each year starting with this Christmas since it was our 1st married Christmas. We chose a house to paint since we are in the process of buying our first home (again, more to come on that soon). We had a lot of fun, and I can't wait to see our finished ornament once it's all glazed and fired. Gotta love pottery. We also drove around and attempted to look at Christmas lights after dinner, however were disappointed in the lack of lights in neighborhoods we thought would be lit up!

Saturday (Christmas Eve) was filled with visiting family. I started the morning off by taking a mini Christmas tree out to the cemetery for my Momma :) My best friend from high school asked if she could go with me since she hasn't been in years... so we did that and then I ran with her to buy a gift for her new boyfriend :) Ah, young love! :) then my husband and I got ready to head out to our 1st stop. My Dad came with us and we headed to Ryan's granny's house in Riverview. There we enjoyed finger foods (my personal favorite was home made cuban sandwiches), singing Christmas caroles around the piano, and a White Elephant gift exchange. Afterwards, we headed over to one of my cousin's houses in Valrico (they conveniently only live about 10 miles away from Ryan's granny). There we enjoyed more food (my favorite was ethnic rice and beans), karaoke, and another White Elephant gift exchange.

Sunday (CHRISTmas day) was not what I was hoping for, but regardless, it was an incredibly blessed day. I suffered from a horrible migraine (to the point that it made me sick) for half of the day. I woke up around 5am and could already feel the pressure building in my neck. I took an excedrin migraine and went back to sleep with the icepack under my neck. When I woke up at 8am I felt better. My husband and I got ready for church, and I felt fine through church. After the service, when we stepped outside, I was immediately effected by the sunlight. Migraine was back a long with sensitivity to light. BOO! We ran by the cemetery again (I found a beautiful butterfly ornament that said Mother and 2011 on it and I wanted to hang it out on the tree I took to the cemetery the day before) and then ran home to change really quick and grab my Daddy. We then all headed over to Ryan's parents house. We are all so blessed to live within a 5 minute radius of each other, and also blessed that are families get a long so well and that my Dad feels comfortable attending all of their functions. It's an amazing blessing for us to all be so close. Once we were there, we enjoyed Spanish Beef Stew that his mom whipped up in the crock pot while she was at church. Spanish Beef Stew is one of our favs (enough to the point tha we requested it for our rehearsal dinner back in April) and as always it was delish, but, my migraine was still building up. It was getting to the point that I was nauseas. We were supposed to be heading to Orlando to finish our evening off with my cousin Kristy and her parents. That never happened. :( As we opened presents at my in-laws, and I held an icepack to my neck and face, I finally got to the point where I had to excuse myself to the bathroom and get sick :( HORRIBLE. From the bathroom floor I called my Aunt and told her what was going on, and that I wouldn't make it. SO SAD. I proceeded to join everyone in the living room as they unwrapped the last few gifts, and then I asked Ryan if he could run me home, like ASAP, and then come back to his parents to gather presents, etc. I just needed to get home right then. I hate being sick to my stomach in front of others. Again, so blessed that we are less than a 5 minute drive away so Ryan rushed me home where I proceeded to get even sicker. UGH! NOT HOW I WANNTED TO SPEND MY FIRST CHRISTMAS AS A MARRIED WOMAN!! I sent my husband back to his parents to gather our things, and hang for a bit. I told him I was literally going to get sick, and crawl into bed as sleep was the only thing that would help this migraine go away, and that I'd rather him spend a bit more time with his parents and granny than sitting and watching me sleep. SO, he ran back down the street, my Dad stayed at home with me, and I did exactly as I said, got sick AGAIN, grabbed the ice pack, took another excedrin migraine, and cuddled up with Chico and Bullseye and slept. I slept for about an hour or two and felt considerably better when I woke up. I didn't feel well enough to chance my stomach on the drive to my Aunt's in Orlando but we did venture over to our EA (Emotionally Adopted) (<-- read more about our EA family by clicking that link) family's house to exchance gifts. We did that and they also offered us some home made Chicken Pot Pie which was perfect for my tummy. Our EA Dad was real sick as well and missed ALL of Christmas with his family. He couldn't get out of bed, so they post poned everything until this morning. I could tell Momma H was down, she said this was the 1st time in their 30 years of marriage that they spent Christmas apart, even if it was just by a bedroom. I checked in today, and he was feeling 10x better today and they were all able to do presents and eat together as a family :) As for my hubby and I today? I was also feeling MUCH better! We left for the Brandon mall early so we could get a ZAGG protective cover installed on my iPad before I do any damage to it :D I am horribly clumbsy with stuff and I want to protect my iPad as best I can. Afterwards we enjoyed a brunch at Sweet Tomatoes, which if you don't know what that is, it's an amazing buffet place that specializes in salads no less! They also have a soup and pasta bar. It's fresh and yummy! We then came home and I ventured to Orlando with my Daddy as he went to his sisters to fix her car and I got to hang with Kristy after dialysis since we missed each other on Christmas. My hubby went and enjoyed some video game time with his best friend. I am waiting for him to come home now, so we can cuddle up to a little TV time... maybe a little Everybody Loves Raymond?

Wow... I feel like I just typed a ton... hope it wasn't too boring!

I can say that while a migraine knocked me for a loop, I still had an amazing Christmas with loved ones and I just feel so incredibly blessed. I am a lucky woman. I am loved unconditionally by so many, and best of all, that includes my Savior Jesus.

Merry CHRISTmas Eve & a Birthday

I am typing this up Friday afternoon (and scheduling it for tomorrow) so that I can take the weekend off from blogging and enjoy all the extra time with my loved ones. I had some stuff I wanted to blog about today, BUT, yesterday's Thankful Thursday post was extra special to me, so I wanted to leave it up for an extra day. I know, I know, it's technically there forever, BUT, I want it to be the first thing readers see when they come to my page for not one day, but two. :D

Anyways, today, I want to share a sweet story with you of a surprise my husband was planning for me that just didn't work out.

The background of the story is my sister and I have only got to meet a handful of times. You see, my mother put her up for adoption when she was an infant. If you want to read about an amazing gift my sisters adoptive mother gave me, click here. She wrote me a letter with very vivid details of when she met with my mother to have the interview to adopt my sister. I received it a few days before I walked down the aisle in April, and it was such a blessing to me. Anyways, my sister and I grew up knowing about each other, however, we didn't meet until we were adults. Oddly enough, we both grew up hours from each other in Florida. Anyways, we met in May of 2004 for the first time. Our biological aunt flew us both from different states to Ohio to attend the funeral of our biological grandmother. I know, I know, odd circumstances to meet. We were delighted though. That was such an amazing but brief trip. The second time we met was July of 05 when I was a bridesmaid in her wedding! And the 3rd and final time we got to hang out was Summer of 06 when she was in Florida with her parents and we met at a half way point for lunch. It is SO hard being away from her. We were raised separately, yet the genetics run deep. We are so much a like. We talk most days via texting. And remain close thanks to technology. 

We've never spent a holiday, birthday, or anything together. After all we've only been face to face a handful of times. Crazy, right?! Well, this year presented the opportunity for us to potentially spend Christmas (and her birthday) together. Her mother was flying her to South Carolina to spend Christmas with her family, and South Carolina is a heckuva lot closer than Kansas (where my sister lives) so when I found out, I immediately starting dreaming of spending my 1st holiday with my sister. I thought I could make it work. The problem was, she didn't fly into SC until late Friday night, so I'd have to leave Florida Friday, drive the 8-9 hours to SC, spend only a day with her, and then drive back to Florida on Christmas day at some point. 

There were many variables to consider:
- there was no way I was spending my 1st married Christmas without my husband, so if I was going, he had to be able to as well.
- I HATE DRIVING. I need a road trip partner regardless
- My husband and I need to remain close by, as we are very close to closing on our 1st home.... more to come on that in the next month! 
- we'd obviously be missing spending Christmas with both of our immediate families here at home
- financial concerns
- mother nature concerns that could hold us up from making it back in time for my husband to be back at work (it looks like I am off til Jan 2nd.... really!?)

SO, as you can see above, TONS to consider. My husband told me from the start it just didn't seem like a good idea. SO, I chalked it up to a negative. I knew from the start it likely wouldn't work out, BUT, a girl can dream, eh?

Well, Monday as I am at work, my husband asks if I am off on Wednesday, to which I reply "I don't know, I was supposed to be, but it looks like we have jobs starting and I'll work through Wednesday" to which he replied "I really need you to be off on Wednesday"... I said I'd try my best and then he told me his plan. We were to leave for SC on Wed night, so we'd have MORE time to spend with my sister. IE, we'd hit SC on Thursday and have Thursday, Friday, & part of Saturday to spend with my sister, drive home late Saturday and still be home in time for Christmas with our parents as well....

WHAT A SWEET IDEA! One of the million reasons I love this man.


Then I had to crush his spirit by telling him while I'd LOVE to get there early and have extra days with my sister, it just wouldn't work out as my sister herself didn't fly into SC until 11:30pm Friday night.

BIG SAD FACE. :(

BUT, again, it's the thought that counts... He did all the preparations to ensure we could head out late Wednesday night, and he worked things out with his job, and everything was a go.

It just wasn't meant to be though. 


While I am sad this will be another holiday (and birthday) we don't get to spend together, I am extremely happy she will be spending it with her parents. That in itself is a Christmas blessing.

I know we will get more time together, soon. She graduates with her Masters in social services in May, and that will free up her time, and hopefully she can make it to Florida. I am going to do my best to make it to graduation in May....

Coconut Bread Pudding

I am SO excited to share with you one of my late mother's recipes today. It is one of my favorites. It's definitely what I am loving this week. I will warn you though, it sounds weird, but tastes amazing. I've had skeptics before, and after one bite they were sold. I've taken this to a few potlucks and been asked for the recipe. Fair warning though, if you don't like coconut, you probably won't like this, though the taste is not ridiculously strong. If you do like rich, warm, gooey comfort food, this is the perfect recipe.

Ingredients
6 hot dog buns
2 sticks of margarine
2 cups sugar
5 eggs
2 cups milk
1.5 cup of coconut
4 teaspoons of vanilla extract

Directions
Melt Margarine and pour into 13" cake pan
Open buns and put in pan



 notice the butter all melted below the buns, mmm, gives it that rich taste.

Beat eggs, sugar and milk. Stir in coconut and vanilla.


Pour over buns.

Bake @ 350 about 45 minutes.

cut into squares and serve with whip cream if desired.



Notes:
I enjoy this pudding best when it's fresh out of the oven and steam is still rolling off it.
I've never ate it with whipped cream, it is so rich and sweet on it's own, it needs nothing else.
Be sure to cook it at least 45 minutes so it firms up a bit. If it's pulled out too soon it'll be runny, but still good.
I don't measure the coconut and vanilla exactly. Sometimes I use 2 cups of coconut and I just pour the vanilla.

I know it probably sounds weird, and maybe even disgusting, but trust me friends, it's amazingly delicious, and super easy to make. If you end up giving it a try, please let me know what you thought.

Coupons to Troops

I think many people are unaware of the simplest  ways they can helps others; even with something you'd normally throw away or recycle.

A prime example of that is Coupons to Troops.

It is exactly what it sounds like. 

You mail coupons to troops, and the kicker? You mail expired coupons to troops.

That's right. Expired coupons. Coupons you were going to toss anyways.

This is possible because on military bases over seas, the troops are able to use our coupons up to six months past the expiration date.

How cool is that?!

I signed up back in September via the coupons to troop facebook site that I linked above. They paired me with my partner within a week. The lady I send my expired coupons to is based in Japan.

I thought it might be a bit pricey to ship overseas, but come to find out, since we are shipping to a base, there isn't really a difference, and, even better, you can use those priority mail flat rate envelopes and stuff them full, and mail them for less than $5. I mailed out a huge shipment of all my Red Plums and Smart Sources from August & September today. I have two papers delivered to my house each Sunday, as well as a sweet friend from work brings in her copy, so, that was 8 weeks worth of 3 copies a piece that I was able to stuff into one flat rate mailer and ship overseas for under $5. I found that when I do the flat rate priority mailer, not only do I save money, but it gets their quicker as well.

This is one of the many ways we can help people with something we'd otherwise be trashing. If you are a couponer, I encourage you to consider signing up with Coupons to Troops and put those expired coupons to good use instead of trash. If you know anyone that coupons, please spread the word about this awesome service we are able to provide our military overseas. It's the least we could do, right? After all, they are serving our great country, and us. And remember, pray for our troops, as well as our leaders in government

Weekend Recap

My weekend started on Thursday, I went with my Dad and Uncle to the Grand Floridian Resort at Disney to see a 2 story ginger bread house.

 Friday a friend of mine had a birthday party at the local bowling alley, and my husband and I weren't able to make it, BUT, I wanted to be sure to show her some love as I know it can be hard to have a birthday right around Christmas time. I swung by the bowling alley to drop off a present I'd got her, a hat and some touch phone compatible gloves! She always looks adorable in hats, and this was no different.


I also snapped a picture of my 18-20 year old cat sleeping under the tree.... I think I've had her since 1994ish, so she is closer to 18. Either way, she is an old lady :)


And, Saturday was the annual Elf Party. :)

If you didn't read my description of it in prior posts, basically every year for the past 4 years me and some friends have gathered together at Jo's house to eat dinner potluck style, play board games, watch Elf, and then have a bonfire. This year was no different. We had baked potato soup (my 1st time making it!) and lasagna for dinner, and some yummy treats after. There was an intense game of Monopoly and Catan going on at two different tables before the movie. Then, movie + bonfire time.

I'm kind of bummed out because I had a few more pics to upload from the Elf party, but every once in awhile, Blogger decides to not let me flip my photo's when needed to show up correctly. Today was one of those days. SO, instead of uploading side ways pics, and having you tilt your head, I'm just skipping them. LOL
